The sun showed up today so we were finally able to go kayaking and helmet diving. We were supposed to the helmet diving yesterday but the weather was still bad so it was postponed. We did a lot today but it’s okay. I was scared to try the helmet diving at first but I wanted to experience it so I faced my fear. When I was already under the water and enjoying the activity, I looked up to check if mama followed and I saw her legs under the water and she was standing stiff. She was also giving the wrong signs to the instructor. When I went back up, she said she didn’t want to do it. I thought, sayang naman, but I also didn’t want to force her. When the instructor suggested that we do it together, she agreed. So I went back in the water. Yeyyy!

Who would’ve thought that we would be able to travel today? I think all flights were cancelled because of the storm. I wasn’t expecting that we would be able to travel but we still went to the airport just in case. I have already accepted the possibility of our flight getting cancelled. Of course it’s not cool with all the hassle we would have gone through had it been actually cancelled, but I was okay with God’s plan.

I was thinking to myself early this morning while waiting for our boarding gate number to be announced that I should always welcome detours or re-routes. We really cannot plan too far ahead because we never know what’s going to happen.

Our flight was at 12 noon. Our boarding gate number was announced an hour before our flight. They were probably waiting for further announcements regarding the weather. We had a bumpy ride. It was cloudy and rainy. It was my first time to fly in this kind of weather and I was praying the whole time. However, I didn’t want to worry too much anymore so I gave my worries to God. I told Him, “You allowed us to travel so You will take care of us.”

It was surprisingly sunny when we arrived at the airport. It was actually sunny UNTIL we got into our hotel room! It started pouring hard the moment we stepped into our room! My sister and I were updating each other on Messenger and she shared this with me:

It’s true. A lot of flights were cancelled and many people have re-booked many times already. Wow! I guess God really wanted to give us this time to rest and relax. I have been looking forward to this because I have been working hard that I feel like a machine just working all the time since I took on a second job. Thank You, Jesus! You are our ultimate protector. Thank You!

I took my parents to a vegan restaurant tonight after papa’s check-up. There are certain foods that papa’s not allowed to eat anymore. Veggies and fruits are the best option for him but with some restrictions.

Linguine with Pesto

Linguine with Pesto

Ingredients:

  • 700 g linguine pasta
  • basil leaves (Sorry I didn’t measure them. They were about 3 cups when ground.)
  • 1 head garlic
  • 1/4 c cashew nuts
  • 1/3 c almond nuts
  • 2 tsp ground pepper
  • 1/3 c olive oil
  • 1/2 tbsp salt
  • 1 1/4 c parmesan cheese
  • 2-3 tbsp butter
  • 4-5 tbsp lemon juice

Methods:

Pesto sauce:

  • Put all the ingredients in the food processor and pulse until finely ground.

Pasta:

  • Bring water to a boil
  • Add salt and oil
  • Add the pasta to the water, stir to prevent the noodles from sticking together
  • Cook according to package directions
  • Drain and pour cold water to not overcook

Roasted Herb Chicken

Roasted Herb Chicken

Ingredients:

  • 1 whole chicken
  • 2 heads garlic
  • 3 medium-sized bulbs onion
  • 1/3 cup soy sauce
  • 2 tsp rosemary
  • 2 tsp thyme
  • 2 tsp oregano
  • 1/3 cup olive oil
  • 2 pieces lemon
  • 4 medium-sized potatoes
  • 3 pieces carrots

Methods:

  • Chop 1 head of garlic and 2 bulbs of onion
  • Add soy sauce and lemon juice (juice of 1 lemon)
  • Put the chicken in a pan then pour the marinade into the pan
  • Fill the chicken cavity with the marinade, half lemon, 1 whole carrot, one sliced onion bulb
  • Put the sliced potatoes, carrots, garlic, and lemon around the chicken
  • Drizzle olive oil on the chicken and the vegetables
  • Sprinkle some rosemary, thyme, and oregano
  • Sprinkle some salt on the chicken
  • Bake at 190 degrees Celsius for an hour and a half
