Linguine with Pesto
Ingredients:
- 700 g linguine pasta
- basil leaves (Sorry I didn’t measure them. They were about 3 cups when ground.)
- 1 head garlic
- 1/4 c cashew nuts
- 1/3 c almond nuts
- 2 tsp ground pepper
- 1/3 c olive oil
- 1/2 tbsp salt
- 1 1/4 c parmesan cheese
- 2-3 tbsp butter
- 4-5 tbsp lemon juice
Methods:
Pesto sauce:
- Put all the ingredients in the food processor and pulse until finely ground.
Pasta:
- Bring water to a boil
- Add salt and oil
- Add the pasta to the water, stir to prevent the noodles from sticking together
- Cook according to package directions
- Drain and pour cold water to not overcook
